Carmel Paradise!


             



Ingredients:

Cake
1 box (Preferred brand) yellow cake mix
11/2cup milk
1/3 cup of melted butter
3 eggs


Carmel
1/2 cup butter
1 1/2 cup pure sugar
2 cans of (Preferred brand) evaporated milk

Preparations:
Heat oven to 325°F . Grease pan. In large bowl, beat cake ingredients well. Mix them all together and mix until the batter is neither to thick nor to runny. When cake batter is complete, pour onto greased pan and place in oven for 30-45 mins.
This was a signature dish for my mom, even though she only made it a few times a year. Because she only made it a few times a year, she always put her best work and effort into making it each time. It was as if the cake came alive as it baked, and when it was gone, it was as if a piece of her was missing. You could say she lives for the next time she gets to prepare the dish again. 
 Mom always played music of sum sort when she began the cake. She would be so into preparing the cake that she forgot about everything and everyone else. She was in a trance, in her own zone. The only thing that could remove her from this trance was the cake itself. And by that it would have to be completely finished. She didn't listen to all genres of music, just smooth R&B. She was like a cast member from the movie "Grease". She just had so much coolness amongst her when she made this cake. 
 To began the Carmel glaze, gather large pot and place on stove on medium-low heat. Began mixing Carmel ingredients one at a time. Keep stirring repeatedly until glaze is at right temperature and finished.
While the glaze finished, mom would not leave the kitchen. Since the Carmel was the hardest and most effort taking part of the process. It required stirring every few seconds. If the glaze sat to long it would begin to burn, and the whole cake would be ruined. Mom could have had 1000 thoughts going the her head, but while that glaze was on there was only1 thought important to her, perfection. Perfection is what she always strived for when baking this dish. Also many times did she get those results because of her hard work. 
 When the cake is done baking, remove from oven and let cool for up to 15 mins before topping with Carmel. When cake is cool you may begin topping with Carmel icing! The Carmel should be cool as well before applying icing. When cake and icing are both at correct temperature, you may begin topping your cake. After topping cake it is ready to serve and enjoy! 
 The best part of the process for mom was seeing her masterpiece that she had created finished. It was a feeling of relieve for her. She was overwhelming excited and proud of herself. Only she could get such a pleasant feeling from baking a dessert.  When she was done and had had a short break, she would say to me "Cakes Ready" ! She always lets me be the first to taste the cake. That Carmel cake shall forever be a memory. And a good one at that.
